Bookie Mitchell, founder and owner of Chilli Chicks Thai Cooking School, learned the art of aromatic and spicy Thai cooking at her grandmother’s side.
Now, let her pass on the secrets of achieving the distinctive balance of sour, sweet, salty, bitter and spicy flavours that are the hallmark of the best Thai cooking.
Typical dishes will include: som tum (spicy green papaya salad), pad kaprao (minced chicken with chillies, garlic and basil leaves in oyster sauce served with steamed rice) and banana fritters (deep fried banana with white sesame seeds, coconut flakes served with honey).
Have your pestle and mortar at the ready for a very hands-on class, grinding your way to the perfect, authentic Thai dish.
