About this event
Sam from Fourth and Church will show you how to make three fish dishes from different continents using different methods of curing.
From anchovies to gravadlax and belacan to Arbroath Smokies, cured fish provides exciting taste sensations and forms the backbone of many beloved dishes.
Cultures around the world have different methods of preserving fish; drying, salting, smoking, lacto fermenting or treating with other microorganisms. The advent of refrigeration and mass availability of frozen and canned fish has meant traditional preserving methods are now less common. However, these preservation methods had the secondary effect of deepening and developing new exciting flavours.
In this class Sam from Fourth & Church will show you how to make three fish dishes from different continents using different methods of curing. Learn how the chemical processes transform the texture and flavours of the fish and help preserve them. Eat the three small plates you have made during the session, and take away some cure to make your own cured fish at home.
A sample menu for the class:
- Seabass ceviche, hibiscus, corn nuts
- Grilled shio koji cured mackerel, preserved citrus
- Arctic char – cured with Kummel and fennel, caper, onion and crisp bread
Fish types and garnishes may change due to seasonal availability and local landings to ensure the freshest and most sustainable product.
