  Wednesday 22 May 2019

  6:30 pm  - 9:00 pm

traditional french eclairs with chocolate and hazelnuts, shallow focusIn our ‘introduction to patisserie’ classes, experienced pastry chef Charlotte Fuller reveals the tips behind the top pâtissiers.

This class will see you making and baking classic French eclairs, made with light choux pastry – and learning how to feel your way to that elusive moment your choux paste is ready. You will learn piping and filling techniques to ensure a professional finish. While your choux buns rise in the oven, you will make delicious crème pâtissière filling and the smoothest of salted chocolate ganaches to decorate them.

What previous participants said: “I learned so much. I’m so impressed with the eclairs.” “Brilliant – it was my daughter’s Birthday and she loved it! ‘Best Birthday EVER!’ *she now wants to be a pastry chef. Thank you!”
