Bake and construct a magnificent mini croquembouche under the guidance of a top French pâtissier.
Croquembouche is the traditional showstopper dessert at French weddings but makes a stunning climax to any celebration meal. In this special fundraising class, Julien Plumart will share the secrets behind creating the lightest choux pastry including the professional technique of using ‘craquelin’ for even baking and a crunchy topping. You’ll create the most delicious crème pâtissière and perfect caramel, then learn how to assemble your croquembouche, and decorate with flowers and nougatine so you can wow friends and family. (Please note: the Kitchen will supply packaging for your masterpieces but we strongly advise against cycling home with them!)
This Masterclass will be a relaxed, four-hour session in which you will have plenty of time to talk to Chef Julien about life as a Paris-trained pastry chef and what it’s like to work alongside the likes of Raymond Blanc. While your choux is drying you will enjoy a glass of prosecco (or non-alcoholic alternative) and have a great opportunity to have all your baking conundrums answered.

Unfortunately, we are unable to offer refunds when a place is cancelled less than seven days before the class is due to take place.
