Meet the chefs behind this exciting new venture before their doors open to the public. Keen foragers and chefs Holly Taylor (also a qualified nutritionist) and Toby Geneen (who started his career at St John’s London) will explain exciting techniques including lacto-fermenting and brining as they demonstrate how to make an array of amazing condiments and dishes, including:

  • cultured, homemade butter
  • fermented tomato chutney
  • fermented berry salad with a live berry buttermilk dressing
  • brined pork (or veg) with fermented plums

This class is for everybody looking for new and unusual ways to preserve the summer’s harvest. The focus is on using local ingredients and reducing waste, ensuring even the byproducts of fermentation are reused for other dishes.

Although mainly a demonstration class there will be some hands-on activity, and Holly and Toby will be pleased to answer all of your fermenting and preserving questions. There will be plenty of tasting opportunities too – and even a jar or two to take home. This class is not dairy-free but can be adaptable to gluten-free diets or for vegetarians, please specify when booking.

About Kindling

Kindling Restaurant is on a mission to change the way we eat. The menu will be super seasonal, mainly plant-based dishes complimented by ethical meat and sustainable fish; and aiming to achieve minimal waste. The cooking embraces modern takes on traditional methods, cooking on an open wood and charcoal fire to enhance flavour, alongside preserving and fermenting techniques to conserve the fruitful Sussex seasons.

Opening in late September on East Street, the concept has been developed by husband and wife team, Ramin and Jane Mostowfi (founders of Food For Friends) and their chef team, Holly Taylor and Toby Geneen.

Please bring small, clean glass jars if you can, to takeaway your fermented goodies at the end of this lesson. Tickets for the event include:

  • professional tuition
  • all ingredients and equipment
  • tasters on the night and some fermented foods to take away
  • hot drinks throughout the session
  • all recipes from the class.

Funds raised from this class will support us to run our next ‘Cooking on a Budget’ course for people on low incomes and benefits – one of our most popular and valued community courses. The team from Kindling have generously donated their time for the class.

Refund policy:

We offer a full refund if you change or cancel your place up to 14 days before your class. If you cancel between seven and 14 days before your class, we offer a 50% refund. Unfortunately, we are unable to offer refunds when a place is cancelled less than seven days before the class is due to take place. Please note Eventbrite now has a policy of keeping the Eventbrite fees associated with a booking (roughly 6.5% of the total cost) even when a refund is made.
