Couscous is the classic dish for Fridays and other celebration days and in this class you will learn how to steam your couscous three times to get the perfect light and fluffy texture demanded for such special occasions. To complement it, you will cook up a satisfying vegetable broth, bursting with both goodness and flavour.

You will also prepare zaalouk, a popular, simple aubergine salad, flavoured with cumin and coriander. Choose to serve it warm and chunky, or silky smooth – either way it will be delicious with flatbread, the typical accompaniment for such a spread.

In addition, your tutor Rachida, will demonstrate how to make an authentic harissa, the hot pepper sauce that is flavoured with cumin and caraway and typical of the cuisine of North Africa, found from Libya to Morocco.

This is Rachida’s return visit to the Kitchen, following her successful North African pastries class in 2019. Rachida Zitouni learned how to make Algerian delights as a child by her mother’s side, who had a popular food stall in their local market in southwestern France. Now, she shares these traditional skills with you.

Booking instructions

Tickets for this event are £45, or £40 (per person) when booking two or more tickets at once. We have a limited number of tickets available at a concession rate of £30 for those who are in receipt of a means-tested benefit, as well as full-time students. If available, these options will appear in the drop-down when purchasing your ticket.

Refund policy:

We offer a full refund if you change or cancel your place up to 14 days before your class. If you cancel between seven and 14 days before your class, we offer a 50% refund. Unfortunately, we are unable to offer refunds when a place is cancelled less than seven days before the class is due to take place. Please note Eventbrite now has a policy of keeping the Eventbrite fees associated with a booking (roughly 6.5% of the total cost) even when a refund is made.
