Bookie Mitchell, founder and owner of Chilli Chicks Thai Cooking School, learned the art of aromatic and spicy Thai cooking at her grandmother’s side.
Now, let her pass on the secrets of achieving the distinctive balance of sour, sweet, salty, bitter and spicy flavours that are the hallmark of the best Thai cooking.
Have your pestle and mortar at the ready for a very hands-on class, grinding your way to the perfect, authentic Thai dish. During the session you will work in pairs to create a two-course meal, starting with a prawn on toasts with homemade sweet chilli sauce. For the main you will make Guai-Teaw Tom Yum Gai – Thai spicy noodle soup with coconut milk, shredded chicken, kaffir lime leaves, galangal and lemongrass. The class is adaptable for vegetarians and vegans, with tofu and mushrooms substituting for meat/ fish as needed.
What previous participants said: “I really enjoyed the day – the welcome was warm, it was relaxed and the instructions were clear and simple.” “I’m going to try more dishes and cook what we made for friends! Loved it.” “The food was really authentic, best Thai I’ve tasted.”
