Borough Market Brownies

Serves 6 people


  • 300 grams dark chocolate
  • 3 free range eggs
  • 175 grams unsalted butter
  • 150 grams caster sugar
  • 50 grams cocoa powder
  • 50 grams plain flour

  1. Heat the oven to 180C/fan 160C/gas 4.
  2. Butter and base-line a 20cm-square baking tin with baking parchment.
  3. Gently melt chocolate and unsalted butter together in a bowl over hot water until smooth then cool a little.
  4. Add any extra ingredients to the chocolate mix if you are using them.
  5. Sieve cocoa powder with plain flour and add to the chocolate.
  6. Mix in well.
  7. Whisk the 3 eggs  and caster sugar together until pale.
  8. Fold the eggs into melted chocolate mix until it has a consistent colour.
  9. Pour into the prepared tin and bake for 20 minutes until slightly risen at the edges.
  10. Allow to cool completely in the tin.
