Cheesy Carrot Squares

From The Parents’ Cook Book by the Sure Start Parents’ Network, these delicious snacks can be served hot or cold and are popular with young and old alike.

Serves 12 people


1 tablespoon olive oil
1 onion, peeled &finely chopped
1 clove garlic peeled &finely chopped
175g/6 oz grated carrot (approx. 2 medium carrots)
150g/5 oz oats
150g/5 oz grated cheese – cheddar or other hard cheese
1 egg
1 teaspoon marmite or soy sauce
1 tablespoon tomato puree
Handful fresh chopped parsley or ½ tsp dried mixed herbs (optional)
1 teaspoon chilli flakes (optional)
1 tablespoon sesame seeds (optional)

  1. Pre-heat oven to 170°C/325°F/gas 3. Line an oven tray with baking parchment, or brush it with olive oil.
  2. Heat the oil in a frying pan and fry the onions and garlic in over low a heat until soft. Allow to cool slightly while you grate the carrots & cheese.
  3. Mix cheese, carrots and oats together well in a large mixing bowl. Add the fried onion mixture and stir until it’s well combined.
  4. Beat egg with marmite or soy sauce and tomato puree. Add in the herbs/chilli – if using. Mix well with the oat, cheese and vegetable mixture.
  5. Press into a greased baking tin and sprinkle with sesame seeds, if using.
  6. Bake for 20-30 minutes, until browned. Cut into squares while still warm.
