6:00 pm - 9:00 pm
Louise, who grew up with the tastes of the Philippines and founded Brighton’s Mestiza, and Sam, former head chef at 64 Degrees, are the enthusiastic teachers behind this workshop. We’re thrilled to welcome them back to the Community Kitchen after a sold-out masterclass in February. Let them introduce you to the spicy, sweet, salty and sour flavours of Filipino cuisine!
You’ll start the lesson by practicing the essentials of whole fish preparation, from selecting your fish to knife skills for filleting, using locally-caught mackerel. Then learn four different techniques for your fillets – from ceviche-style to pan-fried to skewered for the barbeque – and create an accompanying salsa, all using classic Filipino ingredients and flavours.
Louise and Sam will also share their knowledge and love for the simple oyster – demystify these marine molluscs and learn how to choose, shuck, clean and dress to taste them at their best.
Finish the class with a feast, shared around our table in typical Filipino style, with a complimentary beer alongside.
Tickets for this event include:
- professional cookery tuition
- all ingredients and equipment
- hot drinks throughout the session
- a full meal at our sociable dining table including a complimentary beer or soft drink (you are welcome to bring other drinks to enjoy with the meal)
- all recipes from the class.
Tickets for this event are £55 per person including all equipment, food, and accompanying drinks.
Any profits raised from our cookery classes support our community cookery activities – where everyone can experience the benefits of cooking and eating together, regardless of finance, confidence or ability. Sign-up to our email newsletters to be the first to know about future classes.
Funds raised from this class will support us to run an autumn ‘Cooking on a Budget’ course for people on low incomes and benefits – one of our most popular and valued community courses. Louise and Sam have generously donated their time for the class.
This event is now SOLD OUT – however you may wish to add yourself to the waiting list below as last minute cancellations can release places. Sign-up to our email list to be the first to hear about new dates for classes.
