Louise, who grew up with the tastes of the Philippines and founded Brighton’s Mestiza, and Sam, former head chef at 64 Degrees, are the enthusiastic teachers behind this workshop. We’re thrilled to welcome them back to the Community Kitchen after a sold-out masterclass in February. Let them introduce you to the spicy, sweet, salty and sour flavours of Filipino cuisine!
You’ll start the lesson by practicing the essentials of whole fish preparation, from selecting your fish to knife skills for filleting, using locally-caught mackerel. Then learn four different techniques for your fillets – from ceviche-style to pan-fried to skewered for the barbeque – and create an accompanying salsa, all using classic Filipino ingredients and flavours.
Louise and Sam will also share their knowledge and love for the simple oyster – demystify these marine molluscs and learn how to choose, shuck, clean and dress to taste them at their best.
Finish the class with a feast, shared around our table in typical Filipino style, with a complimentary beer alongside.

Tickets for this event are £55 per person including all equipment, food, and accompanying drinks.
