Delight your friends and family with an array of vibrant dishes from central and south America.

In this class, chef Diego Ricaurte is your guide as you create a range of classic street food dishes from Colombia, Mexico and Ecuador. You will learn about choosing quality meat for your dishes and about the mix of indigenous and Spanish flavours that influence Latin American cuisine.

You will work in pairs to create a menu which typically includes dishes such as:

• Handmade arepas (corn patties) or tortillas for tacos
• Fillings such as chicharron (crispy pork), cochinita (slow-roasted pork) or fried prawn (depending on season/ availability)
• With sides such as refried black beans and a range of flavourful salsas

Diego has a strong quality-over-quantity ethic, and the class will work with a robustly flavoured pork shoulder from the traditional rare-breed Middle White, sourced from Huntsham Farm, Herefordshire. All the dishes are gluten-free and designed to be recreated quickly at home for fun and healthy family meals.
