Find out all it takes to home-cure your own cuts of pork in this charcuterie class led by Craig from Barfields Butchers.
Find out what goes into achieving delicious traditional British bacon and authentic Italian capocollo (also called coppa), learn about the cuts needed to produce the best cures and discover at first-hand how to choose the flavours for your own cured meat. You will mix spices and salt to produce your own wonderful cure and go home armed with all you need to know to ensure the curing process goes perfectly, including how to carry out the pH test that will let you know when your meat is just right to eat.
As a participant in this workshop you won’t be able to enjoy the fruits from your labours until four to six weeks down the line – and so that you can fully appreciate the difference in home-cured bacon without delay you’ll also get to taste some finished products in the class.

Craig is also running a butchery skills class at the Community Kitchen.

Tickets for this event are £45 per person, or £40 (per person) when booking two or more tickets at once. We have a limited number of tickets available at a concession rate of £30 for those who are in receipt of a means-tested benefit, under-18s (must be accompanied by an adult), as well as full-time students.
