Find out all it takes to home-cure your own cuts of pork in this charcuterie class led by Craig from Barfields Butchers.
Find out what goes into achieving the delicious flavours of traditional British bacon and authentic Italian capocollo (aka coppa), learn about the cuts for the best cures and mix the salt and spice mix for your own wonderful cure.
You will go home from this workshop armed with all you need to know to ensure the curing process started in the class goes perfectly, including how to carry out the pH test that will let you know when your meat is just right to eat.
As a participant in this workshop you won’t be able to enjoy the fruits from your labours until four to six weeks down the line – and so you’ll also get to taste some finished products in the class so you can fully appreciate the difference of home-cured bacon without delay!
Tickets for this event are £45, or £35 (per person) when booking two or more tickets at once. We have a limited number of tickets available at a concession rate of £35 for those who are in receipt of a means-tested benefit, as well as full-time students.
