People have been curing meats since ancient times and now the chefs behind Kindling, Brighton’s newest sustainable-eating restaurant, show you how to add a contemporary twist to this traditional and natural process.
In this hands-on class, chefs Holly Taylor and Toby Geneen (who started his career at St John’s London) will help you work with a range of qualitymeats from Brighton’s own Barfields Butchers. As well as experience and knowhow in smoking and curing, you will learn how to mix two super marinades flavoured with herbs and spices such as coriander, juniper, rosemary, garlic, allspice and bay.
And you will leave with a delicious selection of cures, as far from the industrially-produced preserved meats in your local supermarket as you can wish for. You will taste and take home:
- A hunk of home-cured belly pork
- A breast of duck ‘ham’
- Marinated beef jerky and venison biltong
- Crispy pork skin
- Potato tartiflette with the bacon for a light evening meal
This class will change forever the way you think about preserved meat.
Kindling Restaurant is on a mission to change the way we eat. The menu will be super seasonal, mainly plant-based dishes complimented by ethical meat and sustainable fish; and aiming to achieve minimal waste. The cooking embraces modern takes on traditional methods, cooking on an open wood and charcoal fire to enhance flavour, alongside preserving and fermenting techniques to conserve the fruitful Sussex seasons.
Opening in late 2019 on East Street, the concept has been developed by husband and wife team, Ramin and Jane Mostowfi (founders of Food For Friends) and their chef team, Holly Taylor and Toby Geneen.
Tickets for the event include:
- professional tuition
- all ingredients and equipment
- tasters and a light meal on the night plus some cured meats to take away
- hot drinks throughout the session (you are welcome to bring your own drinks to enjoy with the meal)
- all recipes from the class.

Tickets for this event are £55 per person, or £49.99 (per person) when booking two or more tickets at once. We have a limited number of tickets available at a concession rate of £39.99 for those who are in receipt of a means-tested benefit, under-18s (must be accompanied by an adult), as well as full-time students.
