Mexican Masterclass with Xav

Friday 26th September 2025
6:00 pm - 9:00 pm

About this event

Discover the secret behind classic dishes with chef and photographer Xavier Buendia.

His childhood memories are the inspiration for this Masterclass dedicated to home-style Mexican food. Xav has designed his recipes using readily-available ingredients so you can recreate all the dishes you learn to master at home.

You will work in pairs to make a Mexican feast for the evening which will typically include:

  • Either beef barbacoa (Mexican pulled beef) or lamb birria- Depending on availability of locally sourced meat on the day.
  • A range of flavourful salsas, with tips and techniques that will take your salsa game to the next level.
  • Homemade refried beans.
  • We’ll finish by making three variations of authentic street food- Tacos, quesadillas and gringas.
  • Complimentary tasting  of Mezcal from The Lost Explorer  or non alcoholic agave fizz

The lamb or beef for this cookery class will be sourced from Sussex Grazed, a meat box scheme promoting conservation grazing; sourcing high quality, grass-fed animals from the Sussex Downs.
