The traditional Palestinian maqloubah is the star of the show in this Masterclass. A very special upside-down bake featuring rice, Mediterranean veg and lamb (or just veg for a vegetarian/ vegan alternative), a good maqloubah is a fabulous centrepiece for parties!
Amal will guide you through the steps to make your own authentic maqloubah so you can recreate the dish at home. Alongside you will assemble a fresh-tasting tabbouleh, a Middle Eastern classic for a reason and a perfect dish to complement your main.
The evening will also begin with a tasting of the delicious falafel that has made FilFil a Brighton favourite, and, a quick lesson in making hummus – the dip that home-made is so tasty, and simple and cheap to do, that you’ll never settle for shop-bought again.

Falafel is a traditional Arabic food, originating in Egypt, adopted early on by Palestine and other countries throughout North Africa and the Middle East. Amal and her team are keen to bring a great tradition of falafel and Arabic street food to Brighton’s discerning tummies. FilFil is a family-run business that is steeped in culture and tradition. Originating from Haifa, FilFil’s owner Amal has always loved seeing how food brings people together and sharing a real feel of what the Middle East has to offer.
