Bake and construct a magnificent chocolate & crunchy hazelnut layer cake under the guidance of a top French pâtissier.
You will learn a range of classic patisserie recipes before assembling and shaping your cake and decorating with fresh fruit and nuts. You will work in pairs to make the recipes below but each participant will go away with their own small cake, suitable for serving 2-3 people. Learn techniques for:
- Cocoa sable
- Hazelnut praline
- Hazelnut sponge
- Organic chocolate mousse
- Cocoa glaze
This Masterclass will be a relaxed, four-hour session in which you will have plenty of time to talk to Chef Julien about life as a Paris-trained pastry chef and what it’s like to work alongside the likes of Raymond Blanc. During the session you will enjoy a glass of prosecco (or non-alcoholic alternative) and have a great opportunity to have all your baking conundrums answered.
