This fun class will extend your cookery repertoire into exciting new terrain without the need for fancy or costly ingredients as we explore the dishes typical of New Year in Uzbekistan.
In this community cookery class, we will learn how to make tasty little Uzbek samsa, triangular pastry parcels filled with spinach and potatoes that are traditionally eaten between courses at New Year. We will make golubtsi – stuffed cabbage leaves (with mushrooms or mince) – a family favourite across the region, and prepare Russian salad, with peas, potatoes, chicken and carrots. The session wouldn’t be complete without a taster of lapsha, a nutritious and delicious home-made chicken noodle soup.
Your leader is keen home cook and baker Nigora, who grew up learning these dishes from her mother and grandmother in Tashkent, Uzbekistan. She loves to share her joy for cooking with others, and particularly to bring Uzbek food to new people, showcasing how it is influenced by many cultures from China to Turkey to Russia or even Korea.
These dishes are hearty, warming and perfect for every winter night, not just New Year!
