Join Polly Tyrer, author of Leith’s Vegetable Bible, in this masterclass which will elevate and expand your cookery repertoire.

Polly is a well-established chef and successful cookery book writer with over 30 years of experience in the food industry, including working closely with Pru Leith before the ‘Bake Off’. Polly is passionate about seasonal dishes and maximising the flavours of her ingredients.
In this masterclass, Polly will share her tips, tricks and favourite recipes to celebrate a chef favourite – bitter flavours – particularly those found in leafy ingredients like chicory, radicchio, rocket and mizuna. These greens can range in flavour from mild to strong, intensely peppery, almost spicy, or slightly sweet. We will taste a range of leaves and learn how to pair and prepare them in ways that elevate and celebrate their flavours, and how to tailor dishes to your personal tastes. You will leave with essential chef’s tips in working with pastry, caramel and in cooking with bitter greens – ready to take your new skills and make delicious food at home.
You will work in pairs to create a special seasonal menu including:
- Chicory and blue cheese tarte tatin
- Make-your-own bitter leaf salad with honey mustard dressing
- Warm new potatoes with citrus and rocket gremolata
About your chef: Polly Tyrer gained experience as a cook in Spain and California before joining Leith’s School of Food & Wine as Vice Principal when it opened in 1975. She later became Head Chef and Managing Director of Prue Leith’s catering company Leith’s Good Food. Polly Tyrer is the author of six books including the well-respected Leith’s Vegetarian Bible which reached number four in the 2002 Best Sellers List. Find out more.

Refund policy:
We are unable to provide refunds except if there is a mistake with the booking and we are notified within 48 hours after booking. In the event of any change in government covid guidelines, we will reschedule classes if necessary and bookings will be valid for the new date or can be transferred to another event.
