Banana and Coconut Cookies

Packed with flavour these quick ‘n’ easy to make cookies are very versatile for all the family to enjoy.


 

  • 3 ripe bananas
  • 4 tablespoon(s) butter
  • 80 grams approx. chopped dates or raisins
  • 90 grams rolled oats
  • 50 grams desiccated coconut
  • 3 tablespoon(s) fruit juice
  • 1 teaspoon(s) ground cinnamon

 

1. Preheat oven to 180C/ 350F/ Gas 4.

2. In large bowl, mash the bananas and melted butter until smooth.

3. Stir in the oats, dates, coconut, juice and cinnamon.

4. Mix well and allow to sit for 5 minutes.

5. Drop tablespoons of the mix onto a greased or non stick baking tray.

6. Bake for 15-20 minutes (depending on your oven).

Optional:

Next time try adding toasted seeds and grains and using different spices.
