Chocolate Brownies

A delicious gooey treat for everyone to enjoy.

This recipe makes a medium tray of brownies – use a tin about 4” x 10” a small roasting tin would be fine.

Serves 6 people


250g butter
350g caster sugar
4 eggs
½ teaspoon vanilla essence
125g plain flour
85g cocoa powder (not drinking chocolate)
1 teaspoon baking powder
Pinch of salt
125 chopped walnuts (optional)

  1. Line the tin with baking parchment. Pre-heat oven to 180°C/ 350°F/ Gas mark 4
  2. Melt the butter, pour into a large mixing bowl and add the sugar, stir well.
  3. Add eggs, one at a time, beating well after each addition; then stir in the vanilla essence.
  4. Sift all the dry ingredients into the bowl and carefully mix in. Add nuts (if using) and beat the mixture vigorously.
  5. Pour into the prepared tin and bake for about half an hour, or until firm on top. Cool in tin.
