A delicious gooey treat for everyone to enjoy.
This recipe makes a medium tray of brownies – use a tin about 4” x 10” a small roasting tin would be fine.
Method
- Line the tin with baking parchment. Pre-heat oven to 180°C/ 350°F/ Gas mark 4
- Melt the butter, pour into a large mixing bowl and add the sugar, stir well.
- Add eggs, one at a time, beating well after each addition; then stir in the vanilla essence.
- Sift all the dry ingredients into the bowl and carefully mix in. Add nuts (if using) and beat the mixture vigorously.
- Pour into the prepared tin and bake for about half an hour, or until firm on top. Cool in tin.

350g caster sugar
4 eggs
½ teaspoon vanilla essence
125g plain flour
85g cocoa powder (not drinking chocolate)
1 teaspoon baking powder
Pinch of salt
125 chopped walnuts (optional)
