Erika’s Eggy Bread

Every day in the UK, we throw away seven million slices of bread –yes really! Here are some things you can make instead of throwing out your stale bread.

Serves 4 people

Method

  1. Break the egg into a shallow bowl, add the milk and beat with a fork.
  2. Melt the butter in a frying pan.
  3. Cut the bread into triangles, dip both sides into the egg and carefully put into the frying pan. The melted butter must be hot when you put the bread in, to seal the surface and prevent it from soaking in.
  4. Turn the heat down to medium, and fry until the bread is golden brown.
  5. Then turn the bread over and fry on the other side.
  6. Serve hot and fresh.

Ingredients

 

  • 2 egg
  • 20 mL milk
  • 40 grams butter
  • 4 slices of bread (older bread works best)

 

Variations

  • Sprinkle with a little sugar, maple syrup or honey before serving.
  • Use a mixture of cinnamon and sugar for a delicious flavour.
  • Great with slices of banana, blackberries, strawberries or other soft fruit on top.
  • Spread the bread with a little marmite before dipping into the egg.
  • For a more substantial snack, make a cheese sandwich, dip in egg and fry the same way, allowing a little longer for the cheese to melt.
