A simple warm salad of French beans with vinaigrette.
Serves 4 people
- 500 mL Water
- 1 dash(es) salt
- 450 grams French beans (either fresh of frozen)
- 1 tablespoon(s) wine vinegar
- 3 tablespoon(s) olive oil
- 1 large garlic clove, crushed or finely chopped
- 1 dash(es) salt and black pepper
- Bring the water to the boil in a saucepan and add a pinch of salt.
- If using fresh beans cut the tips off both ends, and wash in cold water.
- When the water is boiling tip in the beans, cover the pan and cook until tender – about 7-10 minutes.
- Meanwhile, mix the oil, vinegar, chopped or crushed garlic and seasoning in a salad bowl.
- As soon as the beans are cooked drain them and add to the dressing while still hot.
- Stir well to combine all the ingredients.
- Serve warm or allow the beans to cool down and serve as a side dish or as part of a cold buffet.
