German Apple Cake


  • 125 grams butter (half a packet)
  • 350 grams cooking apples
  • 250 grams self raising flour (or 2 tsp baking powder plus 240g flour – wholemeal or spelt flour work fine in place of plain flour)
  • 125 grams sugar
  • 1 egg, beaten
  • 0.5 teaspoon(s) cinnamon
  • 60 grams demerara sugar
  • 60 grams sultanas
  • 30 grams walnuts, chopped (optional)
  • 1 pinch(es) caster sugar (optional)

  1. Grease a medium sized round or square oven dish.Preheat the oven to 180°C, 350°F, Gas 4.
  2. Melt the butter.
  3. Sift the flour into a mixing bowl.
  4. Stir in the sugar, make a well and add the butter and beaten egg.
  5. Mix well to form a soft dough.
  6. Put three quarters of the dough into the oven dish and spread it out with your fingers until the base of the dish is covered with an even layer of dough. Set on one side.
  7. Peel and core the apples.
  8. Cut them into small dice, place in a bowl with half the demerara sugar, cinnamon, sultanas and nuts, and mix together well.
  9. Spread the apple mixture evenly over the dough.Crumble the remaining quarter of dough over the top and sprinkle with the rest of the demerara sugar.
  10. Place in the oven and bake for 30 – 40 minutes, or until golden brown.
  11. Sprinkle a little caster sugar on top if you like.

Additional tips:

  • Serve warm with cream, custard or ice cream, or cold with cream or greek yoghurt.
  • It is easier to cut into portions when it has cooled down.
  • For a Christmassy version, try a mixture of chopped apple and mincemeat, and use mixed spice instead of cinnamon. Add a few flaked almonds to the topping if you have them.
