German Apple Cake

This cake is great for dessert or as an afternoon tea cake.

Serve with a spoonful of cream or crème fraiche, or a scoop of ice-cream.

Serves 12 people


125g unsalted butter
250g self-raising flour
125g caster sugar
1 egg, beaten
350g cooking apples
½ teaspoon cinnamon
60g sultanas
30g walnuts, chopped (optional)
60g Demerara sugar

 

  1. Preheat the oven to 180°C, 350°F, Gas 4. Grease a medium sized round or square oven dish.
  2. Melt the butter.
  3. Sift the flour into a mixing bowl and add 100g of the caster sugar.
  4. Make a well in the centre of the dried ingredients and pour in the melted butter and beaten egg. Mix well to form soft dough.
  5. Put three quarters of the dough into the baking dish and spread it out with your fingers until the base of the dish is covered with an even layer of dough. Set on one side.
  6. Peel and core the apples. Cut them into small dice, place in a bowl with the remaining caster sugar, cinnamon, sultanas and nuts, and mix together well.
  7. Spread the apple mixture evenly over the dough. Crumble the remaining quarter of dough over the top and sprinkle with the Demerara sugar.
  8. Place in the oven and bake for 30 – 40 minutes, or until golden brown.

Why not try using sweeter apples when they are in season and cut down on the refined sugar in the recipe.

For a Christmassy version, try a mixture of chopped apple and mincemeat, and use mixed spice instead of cinnamon. Add a few flaked almonds to the topping if you have them.
