Homemade Tomato Salsa

A delicious, refreshing, spicy accompaniment to fried food, tortillas, fish dishes, burgers, omelettes etc.


2 medium tomatoes

1 clove garlic, finely chopped

1 red onion, finely chopped

1 red or green chilli, deseeded and finely chopped

1 tbsp tomato paste

1 tbsp coriander, finely chopped

Half a lime – grated zest and juice

1 tbsp olive oil

Pinch of salt, sugar and black pepper

Chop tomatoes very small and put them into a bowl with the garlic.

Mix in the onion, chilli, tomato paste and coriander.

Add the lime zest and juice, oil and seasoning to taste.
