Omelette wraps

Perfect for a packed lunch. You can swap the spinach or avocado for any other leftover veg or salad in the fridge.

Serves 1 person

Method

Crack the eggs and whisk them in a bowl.  

Season to taste.

Heat 1 tsp of oil or pesto in the pan and heat on a medium flame. 

Pour your eggs into the pan and leave to cook without stirring.

Once the eggs are omelette like texture, place a wrap on top and press down fairly and firmly with your hand.

Carefully flip your wrap over so that the eggs are now on top. 

Add the cheese, spinach, sprig onion and any toppings of your choice to one side of the wrap. 

Fold the wrap in half and cook it for 2/3 mins until brown. 

Remove carefully, slice and enjoy it. 
Careful it’s hot.

Prep time: 5 min

Cooking time: 10 mins

2 eggs 

salt and pepper 

1 tsp of oil (or pesto) 

1 tortilla wrap

½ spring onion 

handful of grated cheese

handful of spinach

¼ avocado
