Pea & Mint Mash

Delicious accompaniment to courgette and spinach fritters.

Serves 4 people


 

  • 500 grams fresh or frozen peas
  • 1 bunch fresh mint leaves
  • 115 grams plain yoghurt
  • 1 juice of lime
  • 2 tablespoon(s) olive oil
  • 1 clove garlic

 

 

Place all the ingredients into a food processor and blend into a mash.

Check for seasoning and add salt and pepper to taste.
