Soft Cheese Dip

A delicious light snack for parties or picnics – or a starter for summer lunchtimes.

 

Serves 4 people

Method

  1. Mix all the ingredients together in a bowl until you have the right consistency.
  2. Taste and season with black pepper, and a little salt if necessary.

Ingredients

1 carton soft cheese
3-4 tablespoons plain yoghurt
2 tablespoons chopped fresh herbs
e.g. parsley, chives, fennel, tarragon
1 clove garlic,
crushed or finely chopped
salt and pepper

Serve with veg sticks – carrots, celery, cucumber, peppers – or breadsticks for dipping. Or for a light lunch or patry snack try it spread on sandwiches or in pitta bread with some sliced cucumber and tomato.

Most supermarkets sell their own-brand soft cheese (much cheaper and better than Philadelphia) in little square tubs. If you are watching your weight, choose the lower fat variety
