Cheese Scones

These cheese scones are a delight paired with a spicy chutney, soft cream cheese or simply hot and buttered for a filling brunch snack.

Serves 12 people


1 onion, peeled + finely chopped
A splash of oil
A handful of chives
225g self raising flour
A pinch of salt
110g butter
50g mature cheddar cheese – grated
150ml milk or yoghurt
A saucer of milk

  1. Pre-heat oven to 180°C
  2. Heat the oil in a frying pan and fry the onions until soft, allow to cool.
  3. Finely cut the chives (you can use scissors in a cup).
  4. Line a baking tray with baking parchment.
  5. Put the flour and salt in a large bowl. Cut the butter into chunks and rub it into the flour using your fingertips, until it looks like breadcrumbs. Then add the grated cheese and mix in the chopped chives.
  6. Add milk/yoghurt to the flour mixture and stir until it forms a dough. Light mixing is good!
  7. Roll out dough to 2cm thickness and cut into 5cm circles (approx.) using a biscuit cutter. Turn upside down on the baking try, leaving space around each one. Roll out the trimmings to make more scones.
  8. Brush with milk and sprinkle with a little extra grated cheese if you like then bake for around 12 minutes until golden on top.
