Feta Stuffed Roasted Peppers

A colourful and flavoursome dish, served as a tasty side or with salad as a light lunch


 

  • 4 Red Peppers
  • 4 Medium Tomatoes
  • 100 grams Feta Cheese
  • 4 tablespoon(s) Olive Oil
  • 1 pinch(es) Fresh Thyme
  • 1 pinch(es) Fresh Oregano
  • 1 pinch(es) Salt and Black Pepper

 

 

Preheat oven to 180oC.

Cut the peppers in half and deseed.

Roughy chop the tomatoes and sprinkle with salt, pepper and dried herbs

Add oil and leave to marinade for 5 minutes.

Chop the feta cheese into cubes and add to the tomatoes.

Stuff the peppers with the mixture and pour over any remaining liquid.

Bake in the oven for 20-25 minutes. Serve hot or cold.
