Grilled courgette ribbons

A perfect taste of summer and a healthy veggie dish for the barbeque.

Serves 4 people


2 courgettes
1 tbsp olive oil
1 clove garlic
1 tsp chilli flakes (optional)
Salt and pepper
Half a lemon
Small handful parsley

Slice the courgettes lengthways into just under 1cm thick slices.

Place into a large bowl with olive oil, minced garlic, chilli flakes and plenty of salt and pepper, and coat the slices well.

Leave to marinate for about 30 minutes if you can but they will still taste great if cooked straight away. Grill on the barbeque until charred on both sides and soft.

Finish with a squeeze of lemon and a generous sprinkle of chopped parsley.

These are delicious served alongside feta and mint salad and boiled new potatoes.
