Perfect for getting cosy with an afternoon cup of tea and a great way to make use of a glut of apples (and it’s easy on the sugar too).
4 bananas
50ml vegetable oil
75g light brown sugar
75g caster sugar
120ml of your favourite plant based milk
100g spelt flour
150g self raising flour
1/2 tsp salt
1 tsp baking powder
1 tsp cinnamon
1 tsp mixed spice
2 medium dessert apples
Line an 8 or 10 inch cake tin with baking paper and pre-heat oven to 170 degrees.
Mash 4 bananas in a large bowl and add veg oil, sugars, and the plant based milk and mix well.
In another smaller bowl, mix together flours, salt, baking powder, and spices.
Add the dry ingredients to the wet and mix well.
Peel and dice the apples and fold through.
Tip into the tin and bake in the centre of the oven for approximately 1 hour, checking after 40 mins.
It is baked when a knife inserted into the centre comes out clean.
